Pleurotus ostreatus var. columbinus; or Blue Oyster mushroom; grow in little clusters and have a beautiful deep blue hue that fades to gray as they age. They are considered savory. Some say they seem to have a slightly sea water/oyster flavor with undertones of anise, however that is very mild and are more reminiscent of chicken. They sauté beautifully and crisp up nicely. High in protein and fiber, they are also a good source of B vitamins such as Niacin, Pantothenic acid (vitamin B5), and folate.
